What is an internship?


“The position of a student or trainee who works in an organization in order to gain work experience or satisfy requirements for a qualification”

This week our 3rd students commence with their 2nd paid internship cycle. Yes – they earn while they learn!

We are collaborating with some well-known Cape restaurants and mentors.

These include Babylonstoren, The Chefs Warehouse @ Maison, Tokara, Pierneef and Faber.

Each of these fine establishment is headed up by an amazing Head Chef and Brigade that our students will have to get to know.

The key to unlocking this new kitchen and the whole learning curve of a work placed internship experience will be good communication.

Good communication skills will allow these trainees to sit down with their Head Chef to talk through and understand the needs of the kitchen they have joined.

It’s a service related industry and they will be helping to exceed the expectations of each guests dining experience.

They will be quickly reminded of how little they know and that mastering their true passion of culinary arts is going to take many more years.

Our student trainees will have to remain humble as they learn from others and accept the fact that they are still a cook and not a Chef.

We have encouraged them to have a strategy so that they make every minute of this internship count.

They need to listen more than they speak and realize that once again they will be shown a different way to perfect a technique they might already be familiar with.  They will have to be patient as they find ways to fit in with a new brigade and a new menu. 

Fresh starts and new beginnings are always scary.  However, never forget that when you are feeling uncomfortable it’s a positive indication that you are learning.
